Lemon broccoli with Garlic recipe

I grew up eating this. My Mom use to make it. I didn't have hot broccoli till I was around 30. My Mom didn't have a recipe, she just threw a little lemon & a little oil, so she could never give me the recipe. Now she's gotten lazy & just puts Italian salad dressing on it. I just got this recipe from the Taste of Home magazine (that I got from the library). I was so excited to make it & it tastes just like hers.


Lemon Broccoli with Garlic Recipe

Prep/Total Time: 20 min.

Ingredients

1 large bunch broccoli, cut into florets
1/2 cup olive oil
1/4 cup lemon juice
4 garlic cloves, minced
1/4 teaspoon salt
1/8 teaspoon pepper

Directions

Place broccoli in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam for 6-8 minutes or until crisp-tender.
Meanwhile, in a small bowl, combine the remaining ingredients. Immediately place broccoli in ice water. Drain and pat dry. Place in a large bowl. Pour oil mixture over broccoli; toss to coat. Refrigerate until serving.
Yield: 6 servings.


Nutrition Facts: 2/3 cup equals 207 calories, 19 g fat (3 g saturated fat), 0 cholesterol, 140 mg sodium, 9 g carbohydrate, 5 g fiber, 5 g protein.

I absolutely love that magazine! Not always the healthiest options, but they sure taste good. Now this one actually looks to be both healthy and delicious!
