Mommy & Me Monday


Yesterday I was taking a selfie on the deck because that's what I do. lol. So Tara got in the pic with me. I probably won't be doing too many more selfies outside since it's getting cooler now. I realized this weekend that taking photos outside makes you look older. Eeek. I don't go on snapchat that often & don't retouch my photos that much anymore, so there you see my puffy/wrinkly eyes.

Fibro update


Now that Fall is here & the cooler weather my aches & pains have picked up. Lately my feet & legs are killing me & my gums & neck. Fibro is weird because you feel horrible in a certain spot for a few weeks & then all of a sudden it moves to another spot. The past year has been my most stressful year in a long time. Stress makes fibro & a lot of other illnesses worse. I also have chronic fatigue, migraines, ibs & a mutant gene. So things haven't been good because I'm stressed everyday to the point that my stomach hurts & I get chest pains or headaches. I know I would feel a lot better if I didn't have as much stress as I do. I know I need to change my diet & try to exercise more. Exercise is hard too with fibro, so I mostly do yoga stretches & pilates. Not sure how long this current stress is going to last, so if I can make little changes maybe that will help. I need to move somewhere where there is warmer weather, but I don't think that is going to happen anytime soon.

Had my hair dyed today


Do you dye your hair? I've had white hairs since I was 21, but I have a lot more now. I use to dye my hair twice a year, in June for my b-day & in December for x-mas. Now I color it every 2 months.So sad getting older. I color my hair a plum red brown or medium Auburn. Both are darker than my real hair color. My hair is a dark strawberry blonde reddish brown.

I'm trying to learn to take things One day at a time. It's really hard for me because I like to plan things. I keep telling myself to just make it through the day & One day at a time. Tomorrow will be a better day. Don't worry too much about tomorrow ahead of time. Just think about what I have going on today. Tomorrow will come & I'll face the day then.

Tasty Tuesday-Easy stovetop mac & cheese

Easy Stovetop Mac and Cheese


This cheesy, smooth, gooey easy stovetop mac and cheese will become your new dinner favorite!

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes

Ingredients

  • 1/2 lb elbow macaroni or cavatappi (I used rotini because we didn't have elbow macaroni or cavatappi) 
  • 3 cups shredded sharp cheddar cheese (I used shredded Mexican cheese). 
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. In a medium saucepan or dutch oven, melt butter over medium low heat. Once melted, add the flour and whisk for about 3-4 minutes, until thickened. This is called a roux.
  3. Gradually, add the milk, stirring. Bring to a boil (turn up the heat a little) and then simmer for about 3-4 minutes in medium-low heat, stirring often until thickened.
  4. Add the cooked pasta to the sauce and stir until well combined. Season with garlic powder, salt, and pepper to taste. Remember the cheese will be somewhat salty.
  5. Stir in the cheese and mix well until melted and warm, and the pasta is coated evenly with melted cheese. Serve immediately. Enjoy!
