New England Minute~Cannon Mountain

We went on a road trip yesterday & stayed at Anthony's friend's yurt. 1st we met at Cannon mountain. We took a lift to the top of the mountain & had lunch at top, did a hike & took some photos. I took tons of photos, so I'll be adding them little by little on here.

Another book

So I went to the library today & I got another book. This is #4, that I've read over the past few months. I never thought I would have time to be a reader again. Reading for 20 minutes before I go to bed seems to be working. I always have a hard time getting into a new book. Does anyone else have this problem? I'm looking for a website that suggests books to read or a way to keep track of the books I've read. I've heard of Good Reads, but haven't checked it out.

Today is Mesothelioma awareness day



A few days ago I was contacted by a lady named Heather. She told me a little bit about her story. She was diagnosed with Mesothelioma when her daughter was 3 & 1/2 months old. The doctors told her that she had 15 months to live. She beat the odds & is a 7 year survivor. So she wants to raise awareness. Her goal is to get 7,200 social media shares. Tasty Tuesday~Three-Cheese Spaghetti Gratin




Ingredients

1 1/2 cups cooked spaghetti
1 cup shredded mozzarella
1/2 cup grated Swiss cheese, preferably Gruyère
3 scallions, white parts only, thinly sliced
4 large eggs
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup panko
1/2 cup grated Parmesan
3 tablespoons unsalted butter, melted and cooled

Preparation

1. Preheat oven to 375°F and generously mist a 9-inch glass or ceramic pie dish with cooking spray.
2. Combine spaghetti, mozzarella and Swiss cheese in a large bowl. Add scallions and toss to blend. In a small bowl, beat eggs with milk until blended. Pour over spaghetti, season with 1/2 tsp. salt and 1/4 tsp. pepper, mix well and pour into baking dish.
3. Combine panko and Parmesan in a small bowl. Add melted butter; toss with a fork to coat crumbs. Spread evenly over top of spaghetti mixture and bake until golden brown on top, about 25 minutes. Let stand for 5 minutes. Cut into wedges and serve.

The other day I had my "Good" camera out. I took a bunch of photos of Tara next to a sunflower in our yard. So I thought I'd get a few of us together. I always do a Fall photo shoot of her. This isn't it yet. I usually a picture of her in a pile of leaves. Not too many leaves have fallen just yet.

Yum of the Day~Gluten free chocolate chunk cookies

I love to have snacks after dinner & I love to bake when the weather gets cooler. My friend recommended Immaculent baking company's chocolate chunk cookie dough. It's gluten free. She said that she likes them more than regular chocolate chip cookies. We made some last night & they are really good. You just put them on a cookie sheet & pop them in the oven. My daughter & hubby loved them too. I'm going to try some more products from that company soon.

Ten Things Making Me Happy This Week

1. I had a babysitting job on Monday. I haven't worked in 6 years.
2. My hubby found my electric blanket, it was in the attic. I was so cozy last night.
3. I went to the eye doctor the other day & he said that my vision is 20/20 since my surgery. It's only been a month. It doesn't seem like it's 20/20 to me. Still hazy & blurry. But that is good news.
4. I got a flu shot early
5. Got some Happy Mail
6. I got to see a few friends this week
7. I took some fun pics today & want to take more this weekend
8. I'm almost done with the book that I am reading
9. I got some Fall scrapbook paper today & I'm looking forward to using it
10. It was a busy week & I have nothing going on tomorrow

Tasty Tuesday~Slow Cooker Chicken Tortilla Soup




Yield: Serves 8-10
Cook Time: 4 hours

An easy and flavorful chicken soup made in the slow cooker, topped off with shredded cheese and seasoned tortilla strips.

Ingredients:

1lb chicken breast, trimmed
15oz can sweet whole corn kernels, drained
15oz can diced tomatoes, drained
5 C chicken stock
3/4C onion, chopped
3/4C green pepper, chopped
1 serrano pepper, minced
2 cloves garlic, minced
1/4 tsp chili powder
1 1/2 tsp salt, divided
1 tsp ground pepper, divided
Monterey Jack cheese, shredded
tortilla chips on top

Directions:

To your slow cooker add first 9 ingredients plus 1 tsp salt and 3/4 tsp ground pepper. Cook on high for 4 hours or low for 8 hours.

 Prior to serving, remove chicken breasts. Transfer chicken to the bowl of a stand mixer fitted with a paddle attachment for easy shredding. Alternately you may shred chicken by hand. Season chicken with 1/2 tsp salt and 1/4 tsp pepper. Return shredded seasoned chicken to slow cooker bowl. Stir gently.

If serving immediately, divide among bowls. Top off with a generous helping of shredded cheese and seasoned tortilla strips. Soup may be stored in the fridge for up to several days. If freezing, label containers well with soup name and date.

New England minute~Apple picking

We went apple picking today with some friends. I tried to find a place that was in the middle of where we all lived. So I googled apple picking & this place Parlee farms in Tyngsboro, MA came up. It was about 20 minutes from all of us.
 
 
 We took a tractor/hayride out to the apple orchard.



We picked Gala's & Honeycrisp apples, 20 lbs. We split it with our neighbors.



Bff's.


They had the yummiest apple cider donuts.




 
They even had a hay maze & an animal petting zoo.

Happies and Crappies

The Happies:
*My daughter is doing dance & I get to spend time with my friend while our daughters are in dance class. Haven't seen any of my Mommy friends in a while
*We're going apple picking tomorrow with some friends & I'm really looking fwd to it.
*I got a free candle melt package from Glade to review & it smells yummy (review coming next week)
*I have a few new pen pals & I'm hoping to do some swaps
*Went to the mall yesterday & got 2 new Essie polishes. (Not buying any new polish didn't last long)
 
The Crappies:
*I've been getting headaches & pains in my head trying to read. My near-sight is getting worse since my eye surgery. The doc did say that I might need reading glasses, but I think I have to wait till my eyes are clear & done healing. I have an eye appointment on Tuesday.
*It's going to be a really busy week. I always get stressed out when I have a busy week ahead. Doc appointments (2 of them), baby sitting job, Parent/teacher night.
*Haven't gotten much Happy mail lately

dance class


Miss Drama Queen totally drives me crazy at times. She started dance class at a new dance school tonight. She wanted to take jazz. 2 of her friends are in her class. She got out & said she hated it & that it was boring. 1 of her friends was also doing a ballet class, so the teachers let Tara & her friend do a trial class. When she came out she wanted to do both. This Dance school is more expensive than her old 1 & we spent $34 on new jazz shoes. We really don't have the $. 2 classes will also be from 5:45-7:15. After a long day of school & then getting home late. We'll see how things go. I told her that she had to figure out what she wants to do by next Thursday.
