Celebrating our Anniversary

 We went out to eat last night to celebrate our anniversary. I got a Skinny coconut margarita & we ordered nachos. It was a nice night.

Tasty Tuesday~Mexican Chicken Pasta

Mexican Chicken Pasta

  Ingredients:

  • Meat
    • 1 lb Chicken breast
  • Produce
    • 2 Bell peppers, large
    • 4 oz Green chiles
  • Pasta & Grains
    • 8 oz Pasta
  • Baking & Spices
    • 1 tbsp Chili powder
    • 1/2 tsp Salt
  • Oils & Vinegars
    • 2 tbsp Olive oil
  • Nuts & Seeds
    • 1 tbsp Cumin
  • Dairy
    • 1 cup Cheddar cheese
    • 2/3 cups Heavy cream
    • 2/3 cup Milk
    • 1/2 cup Mozzarella cheese
  • Time
  • Prepare: 20M
  • Cook: 30M
  • Total: 50M

Instructions
  1. Slice chicken into small bites. Heat olive oil in a large skillet. Add chicken slices and immediately add half of cumin, half of chili powder and half the amount of salt. Cook for several minutes on high heat, constantly turning, until the chicken is completely cooked through. Remove the chicken from the skillet.
  2. To the same skillet, add sliced bell peppers. Cook for a couple of minutes until they soften. Add diced green chiles. Add back cooked chicken to the skillet.
  3. In the meantime, cook pasta according to package instructions, drain.
  4. Add cooked and drained pasta to the skillet with the chicken and vegetables. Add heavy cream and milk, bring to boil. Immediately add cheese (cheddar and mozzarella) and mix until the cheese is melted and the sauce is smooth. Reduce heat to simmer. Add the remaining half of the spices, and mix to combine. Adjust seasonings, and add more salt, cumin, and chili powder, if needed.

This week I have on Essie's~At Sea Level. It's a pretty pearly whitish-blue. It's really pale. It seems like it can be a bit bumpy. I think this type of pearly polish can be like that.

Celebrating our anniversary early


We went out to eat tonight to a bar & grill. We sat outside on a patio. The food was really good. This was our 1st time  here. We're going to go back soon.

Five Things Friday

1. Briogeo hair care.

 I just got Don't Despair Repair a week ago & I think I really like it. My hair is really dry on the ends & this made it nice & soft. I wish you could use it on dry hair though, so I could use it every day. I only wash my hair twice a week.
2. Holiday weekend.

It's a holiday weekend, so you just have to be happy about that. It's going to be busy & fun.

3. Swaps.
I've gotten a few fun swaps this week. I got an anklet with starfish on it, 2 anniversary cards some summery address labels & some red, white & blue things (a scarf with stars on it, 3 bracelets & 3 scrungies). Those are things that I wished for. I also mailed out 3 wishes this week. I love Sundays because that is wish day.

4. Anniversary.
Our anniversary is next Wednesday, May 30th. We are going out tomorrow night to eat to celebrate. Then Wednesday we are going to go to a patio at a local bar/restaurant & get a drink. It looks cloudy/rainy all week, but that day looks sunny & 82. I hope it doesn't change before then.

5. Friends.
I saw 1 of my friends for a little while today. She wanted to know how to make slime, so her & her daughter (T's friend) came over. Her friend is having a slime birthday party. I'll also be seeing friends on Monday at our cookout. It's nice to be around friends.

Stuff & Things


*There is only a month left of school. I feel like I need to get more serious about getting things organized & getting rid of things. I donated 2 trash bags of clothes a few weeks ago. It's harder to get things done when T is around.

*I signed up for the Sephora play box. I think I'll end up getting a June box. I signed up on Monday, so I don't know if I might get a May box or June. It's only $10 a month, but they are sample sizes. I think that's better in a way because I can carry the stuff in my purse & not get stuck with a full size if I don't like it.



*3 shows I like are off or going off. "Fixer Upper", "The Middle" & today I found out that "The Chew" is going off.

*I decided that every Summer I want to learn something new. This Summer I think I'm going to try to learn calligraphy. My Sister gave me a calligraphy kit when I was around 11 or 12 & I found it when I went to my Parents house about a month ago.

Destash






I saw a You Tuber destashing 1000 things. I'd really like to do something like that. Not sure if I would go for 1000. Maybe I could do 50 a month or 100 a month. I love getting rid of things & having a full trash can or recycle bin. 1 of my goals for this month is to use up make up, lotions & hair products. I've done pretty good with that. I haven't kept the things to show on here though, I just really want to get them out of the house. I really want to simplify my life.

1. Pretty shiny Spring days that we had this week. Getting out & enjoying the weather, seeing flowers blooming & butterflies.

4. My cute cats. They make me laugh.

5. Dollar Tree. I got some nice things earlier this week when I went there.

Tasty Tuesday~Chicken & Dumpling Casserole

Ingredients

  • 2 chicken breasts, cooked and shredded
  • 2 cups chicken broth
  • ½ stick butter
  • 2 cups Bisquick
  • 2 cups whole milk
  • 1 can cream of chicken soup (the herbed cream of chicken soup if you can find it)
  • 3 teaspoons of chicken granules (I use Wylers)
  • 1/2 teaspoon dried sage
  • 1 teaspoon black pepper
  • ½ teaspoon salt, or more to taste

Directions

Preheat oven to 350°F. In a 9x13-inch casserole dish, melt 1/2 stick of butter. Spread shredded chicken over butter. Sprinkle black pepper and dried sage over this layer without stirring anything together. In a small bowl, mix milk and Bisquick, then slowly pour all over chicken layer. Do not stir. In a medium bowl, whisk together 2 cups of chicken broth, chicken granules and soup, then slowly pour over top the casserole. Do not stir. Bake casserole for 30 to 40 minutes, or until the top is golden brown.
