Tasty Tuesday~Sour Cream Chicken Enchilada Casserole

Sour Cream Chicken Enchilada casserole

Ingredients:

1/2 cup salsa
1 can (19 oz.) red enchilada sauce
5-6 cups shredded cooked chicken (about 2 pounds)
1 cup sour cream, light or regular
1 1/2 cups + 1 1/2 cups finely grated cheese 
10 flour tortillas
for garnish extra sour cream

 Instructions:

Put cut up chicken in a bowl, add in the salsa, sour cream & 1 1/2 cups cheese. Mix it up. In a 9x13 pan cover the bottom with enchilada sauce. Take a tortilla & add the chicken mixture down the middle & add it to the pan. Continue to do that. When you have all of the enchiladas in the pan, add more enchilada sauce on top. Add the rest of the cheese on top of that.

Cook at 350f for 20-25 minutes.
