Nail Files. Week # 338

New year's eve nails. They aren't as fancy as I had hoped that they'd be. I might add some more glitter tomorrow. The blue is OPI infinite shine 2-Do you sea what I sea? & the silver is Essie-Making spirits bright.

Magical New Year

I'd love to believe that on New year's day morning I'm going to wake up & turn the page in my planner & magically have everything be different. On a tv show or movie it would be like that. You wake up feeling rested & calm & no aches & pains. Everyone is in a good mood & extremely positive. The sun is out & we have an unusually warm day. The positivity lasts throughout the year & it becomes the best year ever. The End.

Almond shortbread tea cookies

Almond shortbread tea cookies

Prep Time:
10m
Bake/Cook Time:
12m
Yield:
24 cookies

Soft shortbread cookies are filled with almonds and tossed in powdered sugar to make the perfect sweet accompaniment to a cup of hot tea!

Ingredients

  • 2 cups all-purpose flour*
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 cup (2 sticks) unsalted butter softened
  • 1 cup, divided confectioners powdered sugar.
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 1/3 cup finely chopped almonds
*Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.

      Directions

      1. Preheat oven to 350°F. Line a large baking sheet with parchment paper. Set aside.1
      2. In a small bowl, whisk together flour, cornstarch, and salt. Set aside.2
      3. Beat butter, powdered sugar, vanilla extract, and almond extract for about 2 minutes, until light and fluffy.3
      4. Add flour mixture and beat until well combined. Fold in almonds.4
      5. Roll 1 tablespoon of dough into small circles and place on prepared baking sheet, leaving a little space for minimal spreading.5
      6. Bake for 12 minutes. The cookies will not look browned or cooked, but they are. Remove from oven and let cookies rest on baking sheet for 5 minutes.6
      7. Fill a bowl or a paper bag with remaining 1/2 cup powdered sugar. Toss cookies in powdered sugar while still warm. Serve fresh or store in an airtight container for up to 7 days.

      Getting Healthy

I recently went to a new functional medicine doctor & she gave me some tips on being healthy

      *Drink more water.
*Add chia seeds to snacks & meals. I'm working on making chia seed pudding.
*Add Flaxmeal to snacks & meals. It helps get toxins out.
*Have a fish oil liquid. She recommended a Key lime 1 that tastes pretty good.
*Add lemon & cucumber to water. I hate lemon in my water, but I'm working on drinking more of it.
      *Exercise. Start out slow.

      Holiday stress

I'm starting to feel the stress of the Holidays. Anyone else feeling it? I'm thinking of just sending regular Christmas cards instead of a photo card. Things haven't been coming together for a photo to be taken. T has been sick this week & time is marching on. My office is looking pretty messy with the wrapping paper & extra nick-nacks that I've moved because I'm putting out a holiday decoration.

1 thing I do is make lists. Who I'm sending cards to, who I'm buying presents for, ideas of what to get people. Then check off your list & you will feel great when it is completed. You can keep a special Holiday planner, so you don't forget anything or anyone.

Remember self care. Make sure you take time for yourself. Even if you just need 15 minutes to yourself. Have a bubble bath, read a book, have some hot chocolate.

      December goals

It's hard to believe that it's already December & the last month of this year & decade. The years really do fly by the older you get. I'm not going to be doing any year in review posts because this year was horrible. I'm really happy to see it go & I'm looking forward to a better 2020. Here are my monthly goals.

      1. Drink more water (still not doing good on this).
      2. Less soda.
      3. Get together with friends.
      4. Plan my vision board.
      5. Start using the elliptical machine.
      6. Keep de-stashing stuff.
      7. Drop off clothes to donate.
      8. Bring stuff to Goodwill to donate.
      9. Do 5 scrapbook pages.
      10. Organize old scrapbook pages.
