Tasty Tuesday-Bruschetta Chicken Pasta



Bruschetta Chicken Pasta

Ingredients:
  1. 2 (4 oz each) boneless, skinless chicken breasts
  2. 1/2 tsp oil
  3. 1 cup cooked spaghetti
  4. 2 cups zucchini 'noodles' (1 zucchini)
  5. 1 cup diced tomato
  6. 1/4 cup minced red onion
  7. 2 cloves minced garlic
  8. 1/4 cup chopped parsley
  9. 3-5 leaves basil, thinly sliced
  10. 1 1/2 Tbs balsamic vinegar
  11. Sea salt & pepper
Instructions:
  1. Preheat grill. Rub chicken with oil and season with salt & pepper. Grill for 3-4 minutes per side or until chicken is cooked through.
  2. Meanwhile, bring a pot of water to a boil. In a bowl, mix together the tomatoes, onion, garlic, parsley, basil and balsamic vinegar. Season with salt & pepper to taste.
  3. Add cooked spaghetti & zucchini noodles to the boiling water and cook for 1 minute (or until heated through) and then drain. Return noodles and zoodles to the pot and stir in the tomato bruschetta mixture. Toss to combine.
  4. Transfer noodles & veggies to a plate or bowl and top with sliced, cooked chicken.
  5. *Optional: Top with freshly shredded Parmesan cheese
  6. * I didn't use zucchini because we don't like it.

Winter storm

So we are getting ready for our 1st big snowstorm this Winter. We're going to get snow & then it's going to turn to freezing rain & the winds will pick up. We don't have a generator. Hoping that we won't lose power. I'm not a fan of snow, but we have been lucky this Winter.

Stuff & Things

*Football is almost over. I'm so happy about that.

*The drama queen isn't really doing much better. This concussion just doesn't want to go away.

*Hubby will be home tomorrow night from MI for work

*We haven't had much snow at all so far this Winter, but Saturday & Sunday we are suppose to get 18 inches +. So that's not fun. Tara already has Martin Luther King jr. day off on Monday, so that's good. It's suppose to be

*This month seems to be going by pretty fast. I'm happy for that.

Tasty Tuesday-Cheesy chicken broccoli quinoa casserole

Cheesy chicken broccoli quinoa casserole
Ingredients:
2 cups cooked quinoa
1 tsp olive or coconut oil
1 lb raw chicken breasts, cut into bite sized pieces
6 cups broccoli florets, chopped
1/4 cup white onion, chopped
4 garlic cloves, minced
1.5 cups shredded cheddar cheese, divided
1 tbsp whole wheat flour
1 cup milk (or almond milk)
1.5 tsp cumin
1 tsp onion powder
1 tsp garlic powder
1 tsp oregano
2 tsp dried parsley
1/2 tsp black pepper
1/4 tsp cayenne pepper
Directions:
Preheat oven to 375. Cook quinoa according to package directions.
While quinoa is cooking, heat oil over medium-low heat in a large skillet. Add onions and cook until almost translucent. Add garlic and cook for 1 minute. Increase heat to medium-hight and add the cubed chicken. Stir in spices and saute until cooked through. Transfer to a large bowl.
While chicken is cooking, steam or boil the broccoli until crisp-tender. Do not overcook the broccoli as it will soften further in the oven. Add the broccoli to the bowl with the chicken along with the cooked quinoa.
In a small saucepan, whisk together 1 tbsp flour and 1/4 cup milk. Place over medium heat and add the remaining 3/4 cup milk. Heat, stirring constantly, until thickened. Remove from heat and stir in 1 cup of cheese.
Pour sauce over chicken mixture and stir until ingredients are combined and evenly coated. Add to a baking dish coated with cooking spray. Sprinkle the additional cheese over the top. Bake for 20 minutes. Remove from oven an allow to sit for 5-10 minutes before serving.
Servings: 6

This nail polish is by Salon perfect-Gone Sailing. I love this color. This brand has really pretty colors, but they chip pretty fast. This is a neon & it's best to add a top coat to try to get it to stay on longer. I love the brightness of this color. So cheery.

* More appointments for Tara coming up. More physical therapy & She'll be going to Boston Children's hospital in Waltham for a 2nd opinion.

*My Mom came home from rehab yesterday. Hopefully she'll be safe & not fall again. She needs to move slowly. Those Massachusetts people, always in a hurry.

*I'm almost done with the Christmas book that I've been reading. Not sure what I will read next. Maybe a Valentine book. My friend got 1 & it sounds good.

*I have a gastro appointment & a dentist appointment coming up. Working on catching up on things.Getting appointments out of the way that I've been putting off. I need to get my mam this month too. Fun times. I hate that so much. So degrading.

*Trying to stay positive. Take 1 day at a time. Good vibes only.

*Looking forward to Spring. I'm really sick of the brown grass & bare leaves. I can't wait for all of the green to return. Last year I was so happy to see it.

One. Straight hair. I straightened my hair for New year's eve. I haven't straightened it in a long time. I have carpal tunnel & it really hurts to use the straightener, so I don't do it often. I want to start straightening my hair more often.

Goals for 2019



1. Keep destashing things.
2. Speak up for myself more. I feel like I get walked on a lot.
3. Do more You tube videos. 2 a month.
4. Keep up with scrapbooking.
5. Write in my journal more.
6. Get together with positive friends more.
7. Get things done that I didn't get around to in 2018. Like bloodwork. It's been 2 years since I've had blood work. Mostly because you have to fast & I'm always starving in the morning.
8. Date night once a month would be great, but I don't know who would watch T.
9. Go shopping alone more.

That's all for now, but I might add to it.
