This week my daughter Tara is joining us. She has on Pink Hello Kitty polish & a silver glitter Hello Kitty polish (from Target). She doesn't know it, but I got her 5 polish's for Easter. I might be borrowing them soon.

Today I have my Easter nails. Inspired from Pinterest. Yellow Sally Hansen~Hard Lemonade, Green Pure Ice~Wild Thing, Blue Piggy Paint, Purple China Glaze~Grape Juice (just got it today) & Pink China Glaze~Flip Flop Fantasy (also new today). A little messy.

So much going on.

Things are always busy around here, but things have been a little crazy lately. Out of control Drama Queen. Always wanting her way & always being angry. Not really sure what to do to reach her & change things. It kind of wears you down. Being a Mom is so hard. She does dance & is in Daisies. Soon she will be doing t-ball. April-June. Then she wants to try cheerleading. I'm glad she is trying different things & enjoying it & meeting some new friends too. So this week hasn't been so great. Hopefully next week will be better.

5 Things


1. I didn't have the chicken pox till I was 27.
2. I lived with my parents till I was 29 (I couldn't afford my own place & didn't find a roomie till I was 29. Hubby lived with his parents till he was 30)
3. I never broke a bone or sprained anything (I'm wicked clumsy too)
4. I hate talking on the phone. I avoid it whenever I can.
5. I don't text. I have Tracfone & if I read or send a text, they take 30 minutes (units) off.

Chocolate Chip Sour Cream Muffins

We made these muffins last week. They are soooo good. I did chocolate chips & peanut butter chips instead of the white choc chips, since I didn't have any.

Chocolate chip sour cream muffins


2 cups cake flour
1 1/4 teaspoon double acting baking powder 1/2 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons sugar 1 cup sour cream
1/4 cup milk
1 egg
1/2 cup semi-sweet chocolate chips
1/2 cup white chocolate chips
1/2 cup walnuts (optional)


1. Preheat oven to 400 degrees.
2. Sift the dry ingredients together into one large bowl (except chips and nuts).
3. Mix the wet ingredients together into another bowl.
4. Pour the wet ingredients into the dry ingredients and mix well.
5. Add the chips and nuts and fold in.
6. Pour into oil muffin tins and bake for 20-25 minutes or until golden brown on edges.

Chicken & Olive Tamale pie

Chicken and Olive Tamale Pie

(makes four servings) 1/2 cup cornmeal
1 14&3/4 oz. can cream style corn
1 lb. shredded rotisserie* chicken (about 3 cups)
1 16 oz. mild or medium Salsa Verde (green salsa made with tomatillos*)
1/3 cup pimento-stuffed green olives, chopped
1 med. vine-ripened* tomato, thinly sliced
1/3 cup crumbled Queso Fresca cheese (or feta)
Snipped cilantro, green onion, chili powder, and a dollop of sour cream


* Preheat the oven to 400. In a large saucepan, bring 1&1/4 cups water to a boil. Gradually whisk in cornmeal; reduce heat. Cook, whisking constantly, 3 mins. Stir in corn; return to boil. Reduce heat to med. low. Cook, stirring frequently for 10 mins.
*Meanwhile, in a 1&1/2 quart gratin or 2 qt. rectangular baking dish, combine chicken, olives, and salsa. Spread out cornmeal mixture on top of chicken mixture. Top with tomato slices. Bake, uncovered, for 20-25 mins. or until heated through.
*Top with cheese. Sprinkle with cilantro, chopped green onion tops, a sprinkle of chili powder, and the sour cream.

Makes 4 servings

Favorite corner in my house

This is my fave corner in our house. We have a guest room that is also my craft room. People stay over, but usually sleep on the couch in the living room or on an air-mattress. So it's mostly my room. I blog & craft in there. It's cozy. I'd like to add some little white lights to the top of the desk. I think white lights look so cute, even if it isn't Christmas time.

Fresh Tomato Flatbread

Fresh Tomato Flatbread

12 ServingsPrep/Total Time: 25 min.


2 plum tomatoes
1 tube (8 ounces) refrigerated crescent rolls
1 small onion, thinly sliced
2 tablespoons olive oil
1 teaspoon Italian seasoning
1 garlic clove, minced
1/4 teaspoon salt
1/8 teaspoon pepper
1 tablespoon grated Parmesan cheese


*Thinly slice the tomatoes; place on paper towels to drain. Unroll crescent dough; place on an ungreased baking sheet. Roll into a 14-in. x 10-in. rectangle; seal seams and perforations.
* Arrange tomatoes and onion over crust. In a small bowl, combine the oil, Italian seasoning, garlic, salt and pepper; brush over top. Sprinkle with cheese.
*Bake at 375° for 10-14 minutes or until lightly browned. Cut into squares. Yield: 12 servings.

Nutrition Facts: 1 piece equals 101 calories, 6 g fat (1 g saturated fat), trace cholesterol, 205 mg sodium, 9 g carbohydrate, trace fiber, 2 g protein. Diabetic Exchanges: 1 fat, 1/2 starch.
