One of those days

Today was 1 of those days. Like when you go food shopping & realize that you left the food list on the kitchen table & then you try to call your hubby @ home, but you can't get reception in the store (that happened to me the other day & it wasn't the 1st time that I forgot the food list). Everyday is 1 of those days for me, but today was a little worse than usual. Tara was in a mood all day. We argued & she didn't want to listen at all. I'm still behind on things & trying to get caught up from being away. I've noticed the past week that people seem ruder. I'm from Massachusetts, so I'm use to rude people, but they are not usually like that here in NH unless they are from MA. We ran into some rude people in Maine too. Hmm, maybe it's the weather or something in the air. We have a fun weekend planned so hopefully T won't be so cranky & then I won't be so cranky.

My Birthday (the best day of the year)



Today is my birthday & I'm so excited. I love my b-day. I know once you turn 25 you're suppose to hate your b-day, but I still love it even though I'm way over 25. It's the 1 day out of the year that is just yours.

Happy 14th birthday to my furbaby, JoJo

Today is my cutie pie JoJo's birthday. I can't believe she's 14. She was 3 when I got her from the animal rescue league, so I've only had her for 11 years. It seems like a lot longer. We've been through so much together. Lots of ups & downs & changes, but she always makes me smile & feel better. Here's to lots more birthdays together.

We were going to make smores on the firepit tonight, but we're getting ready to go away on vacay, so we didn't have time. So we made them in the toaster oven. They actually came out really good & melted much better than on the firepit.

I really love Summer (even though it hasn't felt like it here lately). But it seems like everyone is so busy. Mail has been slow, People haven't been updating their blogs. It makes me a bit sad, but it happens every year. We have our calendar booked up till August. There definitely isn't a shortage of things to do around here.

New pets

Not sure if you can call them that. My parents went to Cape Cod last weekend & got T 2 hermit crabs. I think they are really cute. They seem more active at night. I need to get a water spray bottle. My Mom said that they get excited when you spray them. Tara named them Little one & Omika.

In a few days

We will be staying at this B&B. I can't wait to get away. I just hope the weather gets better soon. Tomorrow I am officially starting my birthday celebration weekend/week. I am 1 of those people who really does love my birthday. Even though I know it means that I am getting older, I still think it's such a fun & important day.

Summer bucket list~Splash park

One of the things on our Summer bucket list was go to the splash park. We did that today. What a perfect day for that, the 1st day of Summer. T had so much fun. We went 2 years ago & she wouldn't go in the water. Today she loved it. All of her friends were there too, so that made it even more fun for her.

Boston & the Aquarium

We had been planning on going to Boston on 6-18 for a few weeks. We got passes from our library (check your local library for passes to nearby museums & fun spots near you). Well for those of you who don't live in New England, The Bruins won the Stanley cup & the parade ended up being June 18th. So this is what it looked like heading in to the t-station. You can see all the Bruins fans. Finally they said everyone could just go in & ride for free, so that got the lines moving. We didn't watch any of the parade because we figured we wouldn't see anything & would be miles away.

This was T's 1st time going to Boston & the Aquarium.





They now have a touch tank. Where you can touch sting rays & sharks. We got to touch a sting ray. They're very soft.



A shark swam by us, but we didn't get to touch him. Only Anthony did.



We sat & had some Ben & Jerry's ice cream.



Went to the North End & met up with 1 of Anthony's friends that lives there. We went & had a drink with him. We hadn't seen him since Tara was 2 weeks old.



We got in line to eat at Pizzaria Regina. This is us waiting in line. It took an hr & 1/2 to get in.

Getting healthy

I've been trying to eat better lately & have healthy snacks in the house. I just recently started eating Activia & Stonyfield farm probiotic yogurts. I've been having some stomache issues for a few months. I'll be seeing a nutritionist at the end of the month. I'm hoping she can help me. I saw her around 3 years ago. What healthy foods & snacks are you favorites? I'm looking for any ideas people might have.

Our new kitchen floor

This is the old floor. Some parts of it had yellow stains on it. It was at least 20 years old (our house is 30 years old & we found an even older floor underneath it. So it wasn't the original floor).

This is the new floor below. I need to take some more/better pictures of it. Maybe I'll do an update post on here. My hubby did it himself, he had some help, but he didn't hire someone to do it. It saved us a lot of $.

Lately...

I've discovered strawberries. I'm not a fruit person & never ate strawberries, but I've been eating them all the time.

I've really been into red, white & blue things.



I've been addicted to chocolate milk. I used the light Hershey's syrup. I have a glass almost every day.

Spaghetti pie

This is 1 of my all-time fave recipes. 1 of my friends had a baby a few weeks ago & we have a thing in our Mom group where we make new moms meals. I chose this & they loved it. Even her picky eater.

Spaghetti pie from Mr. Food


Serves: 6

Cooking Time: 30 min

Ingredients
1/2 pound cooked spaghetti
2 tablespoons olive oil OR melted butter
2 large eggs, well beaten
1/2 cup plus 2 tablespoons grated Parmesan cheese, divided
1 cup ricotta cheese
1 cup spaghetti sauce
1/2 cup (2 ounces) shredded mozzarella cheese
Instructions
1.Preheat oven to 350°F.

2.In a large bowl, toss spaghetti with olive oil.

3.In a small bowl, combine eggs and 1/2 cup Parmesan cheese. Stir into spaghetti then pour into a lightly greased 10-inch pie plate, and form into a "crust." Spread ricotta evenly over crust, but not quite to edge, and top with spaghetti sauce.

4.Bake, uncovered, for 25 minutes then top with shredded mozzarella and bake 5 more minutes, or until cheese melts.

5.Remove from oven and sprinkle with remaining 2 tablespoons Parmesan cheese. Cool 10 minutes before slicing into wedges.

Timesaving Tips


•When you're making spaghetti for your family, plan ahead and make an extra 1/2 pound for this recipe.

•This is a great make-ahead dish: Just assemble and freeze it without cooking. Thaw then bake just before serving.

I ordered this cute booster seat from Walmart online & it came in to our local store.

I went to Dollar Tree today & got a bunch of cute things. I got this cute journal. Not sure what I am going to with it yet.


I got this star ice tray. We put some cranberry juice in it & water.


I got T some acrylic paint & she painted some rocks.
