Tasty Tuesday~Sour Cream Chicken Enchilada Casserole

Sour Cream Chicken Enchilada casserole

Ingredients:

1/2 cup salsa
1 can (19 oz.) red enchilada sauce
5-6 cups shredded cooked chicken (about 2 pounds)
1 cup sour cream, light or regular
1 1/2 cups + 1 1/2 cups finely grated cheese 
10 flour tortillas
for garnish extra sour cream

 Instructions:

Put cut up chicken in a bowl, add in the salsa, sour cream & 1 1/2 cups cheese. Mix it up. In a 9x13 pan cover the bottom with enchilada sauce. Take a tortilla & add the chicken mixture down the middle & add it to the pan. Continue to do that. When you have all of the enchiladas in the pan, add more enchilada sauce on top. Add the rest of the cheese on top of that.

Cook at 350f for 20-25 minutes.

10 Year Blogiversary/2008-2018

Wow, I can't believe it's my 10 year blogiversary. A lot has changed in 10 years. Most of the bloggers I followed when I 1st started blogging don't blog anymore & now people do You tube instead of blogging. I'm new to You tube, but no matter what, I will always blog. This week I felt like wearing something Springy, so I have on China Glaze~Flip Flop Fantasy. I got a new bottle because I had to throw out my old 1 because it was in bad shape. I think I'm going to be sticking with Spring colors now.

My new plant. I think it's pretty cute. It's an ivy. I've been wanting an English ivy & I found this. I think I might get a 2nd 1 to keep in my bedroom. I'm moving it back & forth.

*New England weather is crazy. It was around 72 on Tuesday & Wednesday & today 40 & snow. I'm ready for no more snow.


*Next week is school vacation week here in New Hampshire. Goddess help me. Hoping for no snow so we can get out & do things.

*I've been watching "Bachelor~ Winter Game"s. I dvr'd tonights, so I'll watch it tomorrow. I like Ashley I. with Kevin.

*I'm not doing very good at going to bed earlier. Here I am writing this post at 10:26 pm. As long as I get to bed by 11:00, I guess that is pretty good.

*I started selling my stuff on Poshmark. I haven't made any sales yet, but I have bought 2 things. My name on there is Kimberleah28 if any of you want to check out my page. I'm going to be adding more stuff this weekend.

*There is a new store called Cost Plus World Market that opened in Salem, NH today. We are going there this weekend to check it out. Anthony wants to get a giant clock for our living room. We saw 1 at Target that we liked. I'm going to sign up for their e mails.

Yes, I'm having Spring fever. It was around 70 today & tomorrow too. But then of course on Thursday possible rain/snow mix. I'm definitely getting out & enjoying the warmth tomorrow. I want to get out & go shopping. I noticed that the daffodils out front are starting to poke up.

I think mine does fit me. I'm a Cancer (Moonchild) & I was born at the end of June. Here are some examples.

Nail Files. Week #314

This week I have on Salon Perfect~Mood Ring (the darker purple) & Salon Perfect~Cut to the Chase (lighter purple). I got both of these polishes at Walmart this week.

Stuff & Things

*I'm looking forward to February being over. I'm over it already. I kind of almost like March & April since we might have a few warm days during those months.

*The weather has been warmish the past few days. It almost felt like Spring. I got out the past few days & did some errands & went to see my friend for a little while yesterday. The warmer weather gets me in such a good mood.

*I want my daughter to be safe in school. I'm sick of hearing about all of these shootings at schools. It's just so sad & not fair.

*I really want to figure out where we are going this Summer for vacation. We have a few ideas where we want to go, we just need to get to planning it.

*It's nice hearing from old friends & making new friends too.

*Hoping to get some crafting done this weekend. We don't have any major plans & it might snow Saturday night. So we might end up staying in on Sunday. I have some movies on tape that I'd like to watch.

Ingredients:

8 oz angel hair pasta
1/2 box 2 cups chopped, cooked chicken
2 10 oz cans cream of chicken soup
1 cup salsa
1 cup sour cream
2 cups Mexican cheese blend divided
1 tbsp taco seasoning
dried parsley for topping (optional)

Instructions:

1. Preheat oven to 350f degrees.
2. Spray a 9x13 baking dish with nonstick cooking spray.
3. Cook pasta according to package directions (remember, you are only using half a box of angel hair pasta here.)
4. Once pasta is cooked, drain well.
5. Place pasta back into the pot and add diced chicken, cream of chicken soups, salsa, sour cream, 1 cup of Mexican cheese blend and taco seasoning.
6. Stir well to combine (this will take a few minutes.)
7. Pour combined mixture into your prepared baking dish.
8. Top with remaining cheese and a sprinkling of dried parsley.
9. Cover with nonstick aluminum foil.
10.  Cook in the oven for about 25 minutes (until hot and bubbly.)

Nail Files. Week # 313

This week I have on Sally Hansen Color Therapy~Ja-cozy. I did another coat on these because it's was chipping a bit. I want to start doing some fancy designs on them soon. It's getting to be that time of year.
