Nail Files. Week # 190
I was really excited to try my new China glaze mini polish called My Way or the Highway. The bottle was half empty (half full?) & it was all thick. I had put it on my pointer finger, but had to take it off because it looked so horrible. So this polish was in a box, so I'm not sure what happened to it. There were 5 minis in the box & the others seem fine, but I haven't used them all though. But they look full. The grayish color is Wet n' Wild Fergie~Heels of Steel & the purple is Essie~No More Film.

My Poor Car
I have lived in New England my whole life & haven't been a fan of Winter since I was a kid. We have a crazy driveway (I might have mentioned that before). So on Sunday I decided to go out & get some errands done before the blizzard. Our driveway was really icy. I ended up sliding into the trees & my car was stuck. Anthony shoveled the driveway & put salt/ sand down. We called AAA & they towed my car out. I went to an auto body place to get an estimate & it will be $2,280.00 to fix. We have to pay the deductable, but then our insurance will go up. So we have to get all of that straightened out & get it going.

Bun Love
For some reason Tara never lets me do her hair pretty, but she let's our neighbor do her hair. She went next store to her bff's house & came home with her hair in a cute bun. Our neighbor does the best buns. I didn't get such a great pic of it.

Tasty Thursday~Baked Chicken Taquitos
Baked Chicken Taquitos
Yield: 12 taquitos
Prep Time: 25 min
Cook Time: 25 min
Ingredients:
3 cups shredded roasted chicken
1 teaspoon ground cumin
1/2 teaspoon kosher salt
1/4 teaspoon garlic powder
1 cup shredded Mexican cheese blend (or cheddar)
12 corn tortillas
cooking spray
guacamole (see tips) and/or sour cream or salsa
Directions:
1. Preheat the oven to 400 degrees F. Line a baking sheet with foil and spray with nonstick spray.
2. Combine the chicken in a bowl with the cumin, salt and garlic powder- mix in the cheese.
3. Place 2 corn tortillas at a time in between two damp paper towels and microwave for 20 to 30 seconds to soften them (helps to prevent cracking when rolling).
4. With 1 tortilla in front of you, place about 1/4 cup of the chicken mixture in the center of the tortilla and roll it up tightly. Place the taquito seam-side-down on the prepared baking sheet. Repeat with the rest of the tortillas and filling.
5. Spray the tops lightly with cooking spray, and bake for 22 to 25 minutes, or until crisp. Serve with guacamole/sour cream/ salsa, as desired.
tips:
*Purchase a chicken already roasted from the market- or make your own- place 1 pound boneless skinless chicken breasts in a steamer pot over boiling water and steam for 10 to 15 minutes, until cooked through. Cool slightly and then use a fork to shred it apart.
*To make easy guacamole for dipping: Mash 1 large avocado with 2 tablespoons sour cream, 1 spoonful of salsa, 1 teaspoon freshly squeezed lime juice and salt and pepper, to taste. *If you are preparing this recipe as gluten-free, just be sure to use a brand of corn tortillas that is known to be GF (and it's probably safest if you cook and shred your own chicken).
*Freezing instructions: After step 4, the taquitos can be frozen in freezer zip bags for up to 3 months. I freeze them on the baking sheet, then take them out of the freezer and move them to zip bags. Prepare from step 5 when ready to bake them from the freezer.

Mommy & Me Monday
Yesterday was Tara's best friend's birthday party. I dropped her off & then we both went to pick her up & we hung out for a while. Right when I walked in, her friend & her asked if they could paint my face. So I let them, They both did some of it. The party was a cat theme. None of the other Moms let them paint their faces.

Weekend
I hope everyone had a good weekend. We chilled on Saturday & today was very busy. Starting tomorrow Tara will be doing a practice dance class to dance at a hockey game on Valentine's day. So the week will be even crazier. I hope we can be motivated to go. It's hard going out on a Monday night.

What's your plan?
I got 2 planners for 2015. I got them both at Target. The little 1 is for my purse. I need to start decorating my pages. I haven't had time lately. I'm okay with cheapish planners. I know some people spend a lot of $ on them. I really don't have the $ for that. But the week goes so fast. I usually keep my planners & calendars, so I know when I had my hair cut or had a doctor's appointment. How many planners & calendars do you have? Have you ever gotten an expensive planner?

Volunteering
Today I only walked 1 dog at the animal shelter. I was pretty happy because it was 16 degrees out. I can only walk level 1 dogs & there was only 1 level 1 dog. So I walked this young dog, Milton. He had so much energy, he was fun to walk. I didn't have much to do, so I helped in the kitchen a little bit.
I went & looked at the cats & saw 2 kittens. Both adopted & going home soon. This 1 was so cute.
He kept moving around, so it wasn't that easy to get a pic of him being still. I got this 1 of him meowing.

Back to school finally
Tara went back to school today after 12 days off. I think it was good for both of us. She had times over vacation that she was bored & sometimes you just need a break. She came home from school happy & in a good mood & I was happy to see her. I'm still not feeling great, so I'm hoping to get some rest this week.

New year's Eve photos
We had a good New year's eve. Some friends stayed over. We met some other friends at a bar/restaurant for 1 drink. I almost went to bed early because I wasn't feeling good, but stayed up until 1:00am.
