Tofu

I've been hearing about this food for years. I was always really scared of it. I'm not sure why. I bought some 2 weeks ago & it sat in my fridge for about 2 weeks. I finally got the courage up to try some on Friday & it's not too bad. I fried it up with some scrambled eggs, peppers & onions. It reminds me of a combo of the white from an egg & cream cheese. I just might have some more soon.

It's a staple in the Asian cultures! If you get the extra firm, cut it into cubes and use it in a stir fry with chicken & broccoli. Or put the cubes in with a chicken broth based soup.

I started eating tofu when I was in Lynn, MA. I didn't really get into it until around 2001, when my mom went into the hospital and I had more choice of what I wanted to make for myself to eat. I always bought the firm because it had more 'substance' to it and loved it in salads or just as a snack.

OH yeah and it takes on the flavor of whatever you cook it in/with. So stir frys are good because the sauce gives it flavor.
