Tasty Tuesday~Tomato Spinach Chicken Spaghetti
Tomato Spinach Chicken Spaghetti

Ingredients:
1/4 cup sun-dried tomatoes, chopped, drained of oil
2 tablespoons olive oil, drained from sun-dried tomatoes
1/2 pound chicken boneless, skinless (preferably, boneless skinless thighs), chopped
1/4 teaspoon red pepper flakes
1/4 teaspoon salt
4 roma tomatoes, chopped
1/4 cup fresh basil leaves, chopped
8 oz fresh spinach
3 garlic cloves
chopped 6 oz spaghetti or angel hair pasta
(OPTIONAL) 3 tablespoons high quality olive oil or oil from the sun-dried tomatoes jar
Instructions:
1. Add chopped sun-dried tomatoes and 2 tablespoons of olive oil, drained from sun-dried tomatoes, to a large skillet, on medium-low heat. Add chopped chicken (I used boneless skinless chicken thighs and prefer to use them, but you can use chopped chicken breast, as well), red pepper flakes, and salt over all of the ingredients in the skillet, and cook on medium heat until chicken is cooked through and no longer pink, about 5 minutes.
2. Add chopped tomatoes, chopped fresh basil leaves, fresh spinach, and chopped garlic to the skillet with chicken, cook on medium heat about 3- 5 minutes until spinach wilts just a little, and tomatoes release some of their juices. Remove from heat. Taste, and add more salt to taste, if needed. Cover with lid and keep off heat.
3.Cook pasta according to package instructions, until al dente. Drain, and add cooked and drained pasta to the skillet with the chicken and vegetables. Reheat on low heat, mix everything well, add more seasonings (salt and pepper), if desired. Remove from heat.
4. At this point, when the pasta and vegetables are off heat, you can add more high quality olive oil, which is really tasty. Or you can add more olive oil from the jar from the sun-dried tomatoes.

Monday Blues
So I woke up with another bad headache today. It was pouring out all day & I had to drop T off at an art camp. Still not feeling great. I'd like to find out why I'm getting so many headaches. So yes I had the blues. When T is in school I look forward to Mondays to get stuff done & be on a schedule. I hope this week goes by fast for everyone.

my fave band
So my favorite band played in Bedford, NH last night. I guess they played someones 50th birthday party. How cool & depressing because we couldn't have gone. So close to us, like 20 minutes away. Gronk was there hanging out with them. It looks like there is a show in Sept in CT, so we have to look into that. Hopefully it will be all ages, so I can bring my my mini Rock Chic. So we'll see what happens & if we can go.

We Still have things to do on our Bucket List
We've done quite a few things this Summer, but we still have a few more things that I want to do before Summer is over. So sad, I don't want to think about Summer being over. It makes me feel ill. We are running out of time.
My list of things is:
1. Vermont (Woodstock, Queechee gorge).
2. York Beach, Maine.
3. Hampton beach (again).
4. Rockport, MA.
5. Portsmouth.
6. North Conway (possibly if A's friend lets us stay at his condo again).
7. Old Orchard Beach, Maine.
8. Go for a bike ride at the rail trail.
9. Take pictures at Searles castle.
10. Paint some rocks with positive sayings.

Getting Organized
I have been trying to get the house organized. T has been over our neighbor's house a lot this week. They went to the beach a few times with her friend & her babysitter. So I've had more time to get house stuff done.
*I'm starting a trashbag of clothes that don't fit anymore & got rid of some magazines today. I have lots more to go through.
*Tomorrow I will be going through my nail polishes. Getting rid of 1s that are dryed up & I just don't like the colors anymore. Some polishes look prettier in the bottle before you use them.
*Next week I want to go through my armoire & pull everything out & decide what clothes I want to keep. I know there's a lot of old stuff in there & a lot of it doesn't fit.

Things & Stuff & Fibro
*Things have been really busy around here the past week. This week will be crazy because we are getting ready for Tara's birthday party on Friday. We need to clean the house really good. The kids are sleeping over & we have to move furniture around.
*Next week T has an art camp 4 days, but only 3 hours a day.
*I'm still behind in letters, but hoping to get a lot done this week. I want to clean out my closet this week & get a bag of clothes together to get rid of.
*We went to see my parents yesterday because my Mom's birthday was today.
*I've been in a lot of pain lately. My knees, shoulder & neck, my legs get tight & stiff. my ribs feel like they are being squeezed really tight & my whole body feels stiff. I've been moving around slowly, it's the only way. I might try Reiki soon & see if my physical therapist can come up with some stretches for me to do.

Berlin Natural Bakery Review
Today I'm doing a review for a company called Berlin Natural Bakery. It is out of Berlin, Ohio. Their products are non gmo & all natural. They have all types of bakery goods. Breads, cookies, pizza dough, stuffing, cornbread, hot dog buns & more. They use spelt wheat in their products. I had never tried spelt before, but I really liked the products that I tried. I have been trying to eat healthier, non gmo, natural & lots of times gluten free. These products are safe for people with wheat sensitivities.
We got to try some herb breadsticks, dinner rolls, Chocolate crinkle cookies & seeded heirloom bread.
My husband, daughter & I all liked the Chocolate crinkle cookies. They weren't too sweet, I know some people don't like stuff that is too sweet. I personally love sweet stuff, the sweeter the better. Unfortunately, I got my sweet tooth from my Dad.
The seeded bread was awesome toasted. I loved the combination of seeds. We added melted butter & garlic salt to the breadsticks when we had that.

House stuff
I've been pretty busy this week.Trying to get stuff done around the house. The garden-picking weeds & watering it. The house-an endless thing because I have an almost 10 year old home for the Summer. It's pretty messy as I write now. It's like being stuck in a rut. Schedules are off & we are all a little off. We have our new gazebo. I love it. I haven't spent all that much time in there because I have so much to do in the house. We got some new pillows for the gazebo & I got a dream catcher when we were in NJ, so we finally got that hung up next to my bed. I want to add something to it. It seems kind of plain.We are going to fix up our bedroom & maybe paint my closet doors & add new knobs. So it will be nice. This isn't the dream catcher that I have, but I like the way it looks. I'll post some real pics soon.

My Dad turned 80
Yesterday was my Dad's 80th b-day. So we had a get together in Salem, MA. It was at an outdoor place & it rained most of the day, but had stopped by the time we got there. It was really chilly for a July night though. My sister & her kids came with their kids. I was a bit disappointed that not many other people showed up, but it wasn't planned all that great. We didn't send out invitations or anything.
This is my sister with my Dad & T & I. I didn't know if I should put my little great nieces & nephews on here, so I'm leaving them out of this blog post. They are adorable though.

Stuff & Things
*This past week was a bit crazy. I had dropped my ipod touch & the button on the bottom was stuck in. I found out online how to temporary fix it. So I brought it to Apple & they gave me a new 1 for $80. So hopefully no more problems with my ipod.
*I'm on for the root canal on Tuesday. The dentist said that he thinks that's for the best instead of having the tooth pulled. I didn't want it pulled.
*We got a cool new gazabo/screenhouse for our yard. It's great because mosquitos love me & I hate them. So I can sit outside & not get bit. We need to get lights for it.
