Goodbye January
Can't say that I enjoyed January at all. A month of us being sick, snow & frigidly cold temps. I always can't wait to get Jan overwith. Not a fan of February either, but it's closer to March & Spring. Spring is such a happy Season, 1 of my faves. Lots of fun things coming up. We have Disney on Ice tomorrow night. Valentine's day, a week off of school. We really need to make plans & keep busy. Fun times with friends. Maybe a date night for me & the mr.

Good hair day (sort of)
After I washed my hair today & styled it, I kind of liked it. I hate my new bangs, but they didn't look too bad. Of course 5 minutes after I took this pic I stuck a barrette in my hair & pulled the bangs back. I hate them in my face.

Yum of the day/New England Minute
Today's Yum is a local wine. My friend brought it to our house on Christmas eve. It's really good. Strawberry flavored. I bought a bottle a few weeks ago, but have been sick, so I haven't had any yet. The vineyard is in Sandown, NH.

Cheesy Rigatoni bake
12 Servings
Prep: 20 min. Bake: 30 min.
Ingredients •1 package (16 ounces) rigatoni or large tube pasta •2 tablespoons butter •1/4 cup all-purpose flour •1/2 teaspoon salt •2 cups milk •1/4 cup water •4 eggs, lightly beaten •2 cans (8 ounces each) tomato sauce •2 cups (8 ounces) shredded part-skim mozzarella cheese, divided •1/4 cup grated Parmesan cheese, divided
Directions
•Cook pasta according to package directions. Meanwhile, in a small saucepan, melt butter. Stir in flour and salt until smooth; gradually add milk and water. Bring to a boil; cook and stir for 2 minutes or until thickened.
•Drain pasta; place in a large bowl. Add eggs. Spoon into two greased 8-in. square baking dishes. Layer each with one can of tomato sauce, half the mozzarella cheese and half the white sauce. Sprinkle each with half the Parmesan cheese.
•Cover and freeze one casserole for up to 3 months. Bake second casserole, uncovered, at 375° for 30-35 minutes or until a meat thermometer reads 160°. © Taste of Home 2012
•To use frozen casserole: Thaw in the refrigerator overnight. Cover and bake at 375° for 40 minutes. Uncover; bake 7-10 minutes longer or until a meat thermometer reads 160°.
•Yield: 2 casseroles (6 servings each).
Nutrition Facts: 1-1/3 cups equals 274 calories, 9 g fat (5 g saturated fat), 92 mg cholesterol, 440 mg sodium, 34 g carbohydrate, 2 g fiber, 15 g protein. Diabetic Exchanges: 2 starch, 1 medium-fat meat, 1/2 fat.

Happy Mail=Happy Day
I've been sending & receiving lots of happy mail lately. It's so nice to get surprise things in the mail. I've been getting lots of post cards. I want to put them all in a book someday. I have every state in the U.S. except Alaska. So I'm going to work on getting one.

New Tattoo this year (I hope)
I'm hoping to get a new tattoo this year on the back of my neck. I was checking out Pinterest & We Heart It for some ideas. I'm thinking of my sign Cancer. Kind of small. Up kind of high. I also love feathers, keys, celestial things, dream catchers & more.

Michael's haul
I got a gift card for Christmas for Michaels. I went in there after X-mas to look for stuff, but couldn't find anything. I've been scrapbooking a lot for the past few weeks & took note of what I needed. Lots of blingy things, so I got all this stuff. I still have $8 left on the gc.

Slow Cooker chicken tacos
I'm making this recipe tomorrow. I'm hoping it's as good as it sounds. I got it from Six Sister's blog.
Ingredients:
1 envelope taco seasoning (I used reduced sodium seasoning and it was still delicious)
5-6 boneless, skinless chicken breasts (mine were frozen)
1 (16 oz) jar of your favorite salsa
Directions: Spray your slow cooker with non-stick cooking spray for easy clean-up. Place chicken in the bottom, pour salsa on top, and sprinkle with taco seasoning. Cook on high for 4 to 6 hours or on low for 6 to 8 hours. When done, the chicken should shred easily when stirred with a fork. For tacos, serve the chicken with crunchy taco shells and/or soft flour tortillas, guacamole, lettuce, shredded cheese, tomatoes, olives, sour cream, and any other taco toppings you love. You could also use the chicken for for enchiladas, nachos, tostadas, quesadillas, etc, etc!

Never again
I am never ever ever cutting bangs again. There, I've said it. I want you all to remind me, the next time I say that I'm thinking of cutting bangs, that it's a bad idea & I said that I was never ever ever cutting bangs again. I found a blog with 15 ideas how to pin back your bangs, but mine are too short to do any of it. When my hair grows a bit I can try some of the ideas.
p.s. Does anyone else think Baby Lips have horrible colors? I got the Pink punch today & yuck (I have that on in this pic). I had the cherry, but it ran out. Maybe I should have stuck with that. I know they have a clear, but I don't really like clear. Even if I put clear under or over a lipstick. It's just not the same.

We're also thinking of Bar Harbor again. We've been there a lot & I really like it there, but we always go in June for my birthday & it's always cool & rainy. There is a boat called the Cat & you can go to Nova Scotia, Canada on it from Bar Harbor. We need a passport for Nova Scotia too. My family way back is from there, so I'd love to check it out since it really isn't too far away. But $ is kind of an issue this year. I might be having eye lazer surgery which isn't cheap. So we'll think about vacations & try to find some cheap hotel faires. At least we can drive & don't need to worry about getting airfare.
