Nail Files. Week # 339

First off, I know this isn't the best of pictures. I took it after I 1st painted my nails earlier this week & I didn't realize that the picture wasn't that great. Now my nails are already chipping & I need to paint over them. This is such a pretty color. I'm wearing Orly~Hot Shot.

Growing up

I thought I would post an update about Tara. She just started middle school. She loves her new homeroom teacher. She is taking Spanish & Chorus. She has a few of her friends in some of her classes. She is a big fan girl of Rock bands. Reminds me of a little mini me. I was into Rock n' Roll since I was 12 & was really into my bands. Her style in clothes has changed. She loves crop tops. She'll be doing Hip hop dance lessons again & starting her 7th year in Girl scouts.

Tasty Tuesday~Apple Cider Muffins

Apple Cider Muffins

From New England Today. Yankee magazine.

Total Time: 55 minutes
Hands-On Time: 20 minutes
Yield: 12 muffins

For the Muffins
Ingredients
  • 2 cups sweet apple cider
  • 1/2 cup unsalted butter, softened, plus more for pan
  • 3/4 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 1/2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 1/4 teaspoons ground nutmeg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon table salt
Instructions
Preheat oven to 375° and set a rack to the middle position. Lightly grease a standard 12-cup muffin pan and set aside.

Put the apple cider into a large saucepan over high heat and bring to a boil. Reduce the heat slightly, and simmer until the liquid is reduced to 1 cup. Set aside to cool.

Using a standing or handheld mixer, cream the butter with the sugar in a large bowl at medium speed until fluffy, about 4 minutes. Add the eggs, one at a time, blending well after each. Add the vanilla extract and blend.

In a medium bowl, whisk together the flour, nutmeg, baking powder, baking soda, and salt. Add a third of this mixture to the butter mixture and beat just to combine. Add half the reduced cider and beat to combine. Repeat with another third of the flour mixture, then the rest of the cider, then the remaining flour mixture. Divide the batter evenly among the prepared muffin cups and transfer to the oven. Bake until tops are firm and a tester inserted into the center comes out clean, 15 to 17 minutes. Remove from the oven and let cool 10 minutes.
For the Topping
Ingredients
  • 3/4 cup granulated sugar
  • 3 tablespoons ground cinnamon
  • 4 tablespoons salted butter, melted
Instructions
In a medium-size bowl, whisk together the sugar and cinnamon. As soon as the muffins are cool enough to handle, brush their tops and sides with butter, then roll in the cinnamon sugar to coat. Serve warm or at room temperature.

Stuff & things

*So I feel like my electronics are going a little crazy lately & Mercury retrograde is over. My ipod hasn't been working right & my computer. I'm back on here though.

* This week was rough with school & T not wanting to go to school. She ended up staying home sick the 2nd day I brought her to the doctor. She said that she thought she had a stomach virus. I think it had a lot to do with nerves. She came home peppy & happy on Thursday & Friday. It's the mornings that are harder. Hopefully next week will be better. She has school pictures & there's an open house.

*We have a bunch of trash bags with clothes in them to donate this week. Can't wait to get it all out of the house.

*I finally got the Mrs. Meyers Apple cider soap. I really want the multipurpose spray. I might have to order it online.

*I went to Bath & Body works last week & got  a bunch of  Sweater weather stuff. A car scent, 2 wax melts & a body lotion. Also a Leaves foaming soap. The body lotion is new & they have hand cream & body sprays & shower gel.
