Tasty Tuesday-Easy Cheesy Chicken Enchiladas
Easy Cheesy Chicken Enchiladas
Ingredients
3-4 cups cooked shredded chicken (i use cooked rotisserie chicken)
1 medium onion, chopped
1 teaspoon olive oil
1 cup sour cream
1/2 cup chopped parsley
1 large can enchilada sauce (La Victoria is my favorite)
3 cups shredded cheese (i use mexican blend)
10-16 flour tortillas

Directions
Preheat oven to 350ºF.
Preheat oven to 350ºF.
Step two. In a large pan over medium heat a teaspoon of olive oil. add the onions and cook until translucent. Stir often.
Step three. Pour 1/2 cup of enchilada sauce over the chicken and onion mixture – just enough to coat the chicken.
Step 5. Once the sour cream and parsley are fully combined, turn off the heat. now add the shredded cheese. I usually add 2 to 2-1/2 cups. Sometimes more.
It just depends on how cheesy you want it. I like the mixture to be creamy & cheesy.
Step 6. Pour just enough sauce in a baking dish to cover the bottom of the dish. (UPDATED: spray pan with non-stick spray first).
Step 8. Roll the tortilla and place in the baking dish. repeat until enough tortillas fill your baking dish – or until the chicken mixture is all used up.
Step 9. Pour enchilada sauce over the completed enchiladas and spread evenly over the top.
Step 10. top with shredded cheese and garnish with chopped parsley. covered with foil and bake for 20-30 minutes. remove the foil for the last 10 minutes of cooking. cook until sauce is bubbling, tortilla edges are slightly crisp, and the cheese to melted. enjoy!

Monthly goals-February
1. Dye my hair.
2. Vacuum the stairs.
3. Make an appointment with the dentist for a follow up. (My crown broke & I had an infection Oct-Dec).
4. Meet up with a friend for lunch or coffee.
5. Clean out my bedroom closet.
6. Bring stuff to Goodwill.
7. Work on more scrapbook pages.

Nail Files. Week # 341
This week I'm wearing Essie-Mauve-livation. This is a Treat Love & Color Essie polish. I've never bought any of these before because they are around $9.99 & I didn't love any of the colors. I was at Target on Friday & they had some of the Treat Love & color polishes on sale for 50% off, so they were only $4.50. So I got this color & it's really pretty.

Spring is on the way
I've been getting excited thinking about Spring getting closer. We only have a few more months to get through & I will be in a better mood. I love Spring, once it warms up. I can't wait for the buds & flowers & leaves. The birds, butterflies & bees. The warm weather, sunshine & sandals. I'm sick of being stuck in the house because it's too cold to go out. Sick of heavy scratchy sweaters, scarves, hats & gloves. I kept dropping my hat the other day. I'm surprised I didn't lose it.

Getting organized-Jewelry
So you might remember that my Mom passed away last April. She had tons of jewelry & got a lot of stuff from QVC. She bought a lot of my jewelry. So my Dad gave some of the jewelry away to family members & there is still quite a bit left. But anyway, the armoire was empty, so I finally brought it to my house. I spent a few days getting my jewelry in it. That's not even all of my jewelry. But it's nice to be able to see it all & have it not get tangled. I have 3 ziplock bags of jewelry that I'm getting rid of too. I might get rid of some more of this if I end up not wearing certain things. I'm going to try to figure out what I wear more & what I don't wear at all.

Today
So today my hubby went for his first colonoscopy. Everything was fine. We went to the mall after. I got Chick-fil-a. We don't have 1 that close to us.
T & I checked out Nordstrom Rack. I wasn't impressed, but T got some stuff. That was my 1st time ever in 1. We also went to Primark, I had never been in there either.
I had to get a pic of this sign because we have a cat named Bianco.

This is a new polish that I got at CVS this week. It's from Essie-Unwrap me. This is limited edition. I love the purple. It's a foil looking polish.
