I did tell my hubs that I would like to paint my toe nails tomorrow & do some scrapbooking & smashbooking. We are going out to eat with my parents & his parents, so we won't be home all day long, but hopefully I can do the things I really want to do.

Teddy bear picnic
Last night they had an event at T's new school. Everyone met in the gym & then they split all the kids up. 1st she got to see the new music teacher doing some songs & being silly. All the kids got scarfs to play with.
Then they went to the library & got to see a puppet show & then they did a craft. She made this cute Teddy bear bag. Then we got to see the Kindergarten room. I think it was a great idea to have the kids see the school & get to meet the teachers.

White chicken enchiladas
I made these tonight & they are really yummy & different.
White Chicken Enchiladas
slightly adapted from Joyful Momma's Kitchen
8 flour tortillas, soft taco size
2 cups cooked, shredded chicken (I used half of a rotisserie chicken)
2 cups shredded Monterey Jack cheese
3 Tbsp butter
3 Tbsp flour
2 cups chicken broth
1 cup sour cream
1 (4 oz) can diced green chilies
Preheat oven to 350 degrees. Spray a 9x13 pan with cooking spray. Mix chicken and 1 cup cheese. Roll up in tortillas and place in pan seam side down. In a small sauce pan over medium heat, melt butter. Whisk in flour and cook 1 minute. Add broth and whisk until smooth. Allow sauce to thicken. Remove from heat and stir in sour cream and chilies. Pour sauce over enchiladas and top with remaining cheese. Bake 20-25 minutes and then broil for a few minutes to brown the cheese.

Going too fast
(photo above from June 2008)
Lately I've been kind of emotional because Tara is almost done with pre-school (the end of May) & going into Kindergarten in September. She has a Teddy bear picnic tomorrow at her new school. I've been thinking about when she was little a lot & all of her 1sts. It's gone way too fast.

May is a busy month
Photo via Pinterest
We have First of the month at our neighbors tomorrow night (margaritas), a pot luck on Saturday, my Aunt & Uncle's 50th anni on Sunday. Then Parent/teacher meeting (evaluation for T), Teddy bear picnic (at her new school), volunteering at her school, Picture day for dance recital, Parent/teacher orientation for Kindergarten, 31 party, Kindergarten testing for T, Tara will be the special helper & they'll be celebrating her July b-day, scrapbooking club, Last day of pre-school & graduation, a 1 year old cutie's b-day party, Memorial day parade, Our 6 year anni & strawberry cutting for the strawberry festival. Wow that's a lot. I love being busy, but I wish I wasn't so exhausted all-the-time.

Stampin up party
Last night I had a Stampin up party.
The girl gave me this cute bag that she made with a few cards in it to keep. We made a Mother's day card. It was a fun night. Our group has become quite the partiers. We've had a 31 party, Tastefully Simple & a few others.
